Role Overview
Odyssey Health Club & Spa is looking for an enthusiastic and experienced Sous Chef to join our kitchen team. Working closely with the Head Chef, you'll help deliver high-quality breakfast, lunch and occasional event catering while maintaining the excellent standards our members and guests expect.
This is a hands-on role, ideal for someone who enjoys cooking with fresh ingredients, supporting a team, and ensuring a smooth-running kitchen in a welcoming hospitality environment.
Key Responsibilities
Food Preparation & Service
- Prepare and present high-quality food to company standards.
- Assist in delivering seasonal, fresh and nutritious menus.
- Ensure consistency in food quality, presentation and portion control.
- Support the kitchen during busy service periods and special events.
Kitchen Operations
- Assist the Head Chef with the day-to-day running of the kitchen.
- Help manage stock, deliveries, stock rotation and storage.
- Minimise food waste while maintaining quality standards.
- Ensure kitchen equipment is used correctly and report any maintenance issues.
Team Support
- Support the Head Chef in supervising and motivating the kitchen team.
- Assist with training and developing junior chefs and kitchen assistants.
- Promote a positive, professional and collaborative working environment.
- Step up to lead the kitchen in the Head Chef's absence.
Food Safety & Compliance
- Maintain the highest standards of food hygiene and kitchen cleanliness.
- Ensure compliance with Food Hygiene Regulations, HACCP, allergen legislation and Health & Safety procedures.
- Complete all required food safety documentation accurately.
- Help prepare for Environmental Health inspections.
Customer Experience
- Deliver an excellent dining experience for members and guests.
- Cater for dietary requirements and food allergies.
- Work closely with the front-of-house team to ensure smooth service.
- Take pride in producing consistently high-quality food.
Skills & Experience
- Previous experience as a Sous Chef or experienced Chef de Partie looking to progress.
- Strong knowledge of food hygiene, HACCP and allergen management.
- Excellent organisational and time management skills.
- Ability to remain calm under pressure and work efficiently during service.
- Passion for producing fresh, high-quality food.
- A positive attitude and strong team player.
Qualifications
- Professional Chef qualification (NVQ Level 2/3 or equivalent preferred).
- Level 2 Food Hygiene Certificate (Level 3 desirable).
- HACCP knowledge and understanding.
